Processing
Harvest, chill and prepare on the same island as the cages.

Harvest is iced and prepared on the same island as the cages.

Fish leave the ring, then the plant — a short road.

Processing is matched to the cages at 20,000 tonnes.
When fish reach harvest weight they are taken from the cage, killed humanely, bled and put on ice. Gutting, filleting, freezing and packing are designed to happen on Dalma, so the chain is short and the origin is simple to state.
The process is lift, kill, bleed, ice, cut, pack. Cold is the first processing step. A truck waiting in another emirate is the opposite of this plant.
The plant is matched to the cages at 20,000 tonnes. That matching is the point: processing is not a distant factory waiting on a harvest it did not grow. Later shrimp and mud crab follow the same rule — raise them here, prepare them here.
Figures on this page remain design capacities until the desk says otherwise. They describe the size of the system being built.
The process
How this plant is run, step by step.
Each step is cultivation work — water, feed, transfer, ice — not a portrait of the company.

01
Lift fish from the cage
Harvest starts at the ring. The plant is on Dalma so a harvested fish does not travel a country before it is prepared. That matching is the design.

02
Kill humanely, then bleed
Fish are killed as they should be, then bled. This is husbandry at the end of the year, not a skippable step. Quality on ice begins here.

03
Put the harvest on ice at once
Cold is the first processing step. Ice on the island, not a truck waiting in another emirate, is why the plant sits next to the cages.

04
Gut, fillet and grade
Gutting, filleting and grading are designed to happen on Dalma. The origin stays simple to state: this fish was raised and prepared on one island.

05
Freeze and pack
Freezing and packing close the chain. Design capacity matches the cages at 20,000 tonnes, so processing is not a distant factory waiting on a harvest it did not grow.

06
State the origin as Dalma
A short road from ring to plant is the public claim. Later shrimp and mud crab follow the same rule: raise them here, prepare them here.
In the chain
Four plants, in the order they are meant to work.
01Hatchery
Broodstock, eggs, larvae and juveniles — seed for the cages, raised onshore.

02Feed plant
Pellets mixed on Dalma, sized so feed is not the constraint on the cages.
